  1. Cut the chicken breasts into matchbox-sized pieces, about ¼ inch thick, ensuring they are wide and flat.
  2. Place the chicken pieces into a large ziplock bag.
  3. Add the soy sauce, cornstarch, garlic, sesame oil, honey, and red pepper flakes (if using) to the bag.
  4. Seal the bag and massage gently to coat the chicken evenly.
  5. Marinate in the refrigerator for 2 hours.
  6. Heat the vegetable oil in a large, heavy skillet over medium-high heat.
  7. Remove the chicken from the marinade, shaking off any excess.
  8. Add the chicken to the skillet, ensuring the pieces are not overcrowded. (Cook in batches if necessary.)
  9. Brown the chicken on both sides, cooking for 3-4 minutes per side, until fully cooked and golden.
